Perfectly done medium rare!
We had just spent a fun but wet and chilly afternoon at Woodlands Park Zoo - typical Pacific Northwest weather. So, we thought a Sunday roast to warm our cockles!
Our first task was to find a butcher who knows British cuts of meat and we found one in Woodinville called Bill the Butcher. Yeah, that really is the name of the store. It's conveniently located just up the hill from Columbia winery where we also picked up a wine for pairing and was recommended the 2009 Lapis Red Blend - very tasty!
Back at home we fired up the oven and put on our aprons to start our Sunday roast and we stumbled on Jamie's instruction to jack the oven up to 475C for 50mins! We thought "could this be a misprint" - Really?? After we had spent just over $100 for our spectacular slab of meat to turn it into jerky! But we put our trust and faith in Jamie's hands and it paid off with a perfectly done medium rare roast!
But a roast can't stand alone.....we added all the trimmings - roasted acorn squash, roast potatoes, peas and of course, gravy. Yum! Extra yoga planks that night.
So, here's a toast to our first recipe and launch of our Jamie Oliver Great Britain project. It was a success :-)......Cheers!
