Easter Sunday with Friends

April 8, 2012

Our first Easter weekend together, we had planned to explore Victoria BC, but decided to stay put and invite friends over for an Easter Sunday late lunch or early dinner....however you want to call a 2:30pm meal?

We are glad to have shared this Easter with great friends, Steve & Marisa and Simon & Tara.

Conversation flowed and laughter filled the house.  By the end of the afternoon, we were comfortably full and everyone ready for a nap.  We'll take that as a sign of a successful dinner party!

On the menu:
Warm Tomato Salad, Crispy Black Pudding & Worcestershire Dressing

Empire Chicken and Bombay Roasted Potatoes & Gravy

Happy Fish Pie

Vegetable Platter & Dip by Simon & Tara

Homemade Berry Cheesecake by Marisa & Steve

Just a few words about our experience with the recipes.  Hands down everyone's favorite was the Empire Roast Chicken and Bombay Gravy. Yum!  The Happy Fish Pie recipe was also very tasty but it took most of our Saturday afternoon preparing so be warned....allow for half a day in the kitchen (drinking wine helps....honest!).  We found The Fish Pie instructions    confusing......the directions were disjointed and we felt should be more specific, or perhaps we just had too many sips of our extra boozy homemade sangria :)  The Warm Tomato Salad with Black Pudding was a nice combo of fresh and crispy.  The Black Pudding was best thinly cut and fried right through - similar to streaky bacon!  PS. Don't let the name scare you off and don't ask what's in the pudding - just trust us - it tastes gooood!

Overall, it was another successful cooking session!  Our guests left happy and content with leftovers in tow.

Our only regret, was that in our excitement to tuck into the meal, we forgot to take pictures of our guests.  Sorry guys!  We promise your smiley faces will make it into our blog ;-)
